Operating Procedures Guidelines for Pre-cooling Operations
Fresh Produce
In
all water contact processes, a water quality standard needs to be maintained
equivalent to potable water quality. Whenever possible, continuous monitoring
is preferable to spot checking in re-circulating water systems.
Hydrovac
Operations
Due to specific process conditions related to Hydrovac operations
of vacuum (negative pressure), treatment of sanitizer should be applied
before each load as needed to attain proper ORP value, and checked after
every load once vacuum is released and doors are opened.
SOP
Hydrovac
1. Check ORP before each load
2. Add sanitizer if below 675mV on one side of a half car or both sides
on a full car
3. Mix water after adding sanitizer by running the shower pump
4. Check ORP and repeat steps 2 and 3 until ORP is at least 675 mV before
running a load
5. Maintain ORP log records for each load
SOP
Ice-Injector Systems
1. Check ORP every 30 minutes or before each load on the ice slurry
2. Add sanitizer if ORP is below 675mV in the tank
3. Let it mix for about 1 minute with the tank mixer running
4. Check ORP and repeat steps 2 and 3 until ORP is at least 675 mV before
running a load
5. Maintain ORP log records every 30 minutes during use or before each
load
SOP
Hydro-Cooler
1. Check ORP every 30 minutes or before each load
2. Add sanitizer if ORP is below 675mV in the tank
3. Let it mix for about 2 minutes with the shower pump running
4. Check ORP and repeat steps 2 and 3 until ORP is at least 675 mV before
running a load
5. Maintain ORP log records every 30 minutes during use or before each
load
